Nettle Soup:
1 onnion chopped
8 large handfulls young nettle tops
1 oz flour
1 oz butter
2 pints of chicken stock
salt + pepper
Method: Cook onion and nettle in butter until soft
add flour and cook for 2-3 mins
add stock and simmer for 10 minutes
pulse soup, season and garnish with a little creme fraiche.
This soup can also be served cold.
Watercress Soup:
follow the recipe above but add watercress instead of nettles.
Rabbit Pie:
1 Rabbit. cut up left on the bone
1 onion
1/2 celery head
4 carrots
2 bay leaves
Thyme and Parsley
2 pints of chicken stock
Salt and Pepper
2 oz Butter
Method:
Melt butter in a pot, brown rabbit pieces, add vegtables
and chopped thyme + bay leaves.
Sweat for 4-6 mins add stock and simmer for 50 mins.
Add parsley and serve with crusty bread and mashed spuds.
Pidgeon Pie:
4 pidgeons cut up
3 oz smokey bacon
1 onion, 1/2 celery stick, 4 carrots
1 pint chicken stock
follow the method for rabiit pie and serve with colcannon and an optional glass of red wine.
