Jenny will share a seasonal recipe and talk about the upcoming trends in the food world, focusing on local suppliers. She will also give tips and tricks for entertaining at home.

Double Chocolate Tart

I love this recipe, the crisp chocolaty biscuit base adds to the richness of the chocolate filling, and best of all it can be made a few days before the Christmas dinner to take the pressure off the oven and yourself. It is a real chocolate lovers’ cake!

Chocolate Pastry Base


  • 220g cream flour
  • 150g Irish butter
  • 65g caster sugar
  • 2 medium eggs


Prepare your 12inch shallow cake tin by brushing with oil and dusting with flour

In a bowl beat the sugar and butter together until they become soft, drop an egg in one at a time

Sieve the flour and cocoa powder together


Fold into the egg mixture

It will come together, allow it to rest in the fridge for about 30mins before you roll out

Dust your surface and roll out a thin layer and put it into your prepared tray.

Bake with baking beans at 170c for 15mins and remove beans and cook for a further 5 mins

Chocolate Tart Filling


  • 300g 70% dark chocolate
  • 100g caramel chocolate
  • 100g milk chocolate
  • 475g cream
  • 150g butter


Melt the chocolates in a large bowl with the cream over a pan of simmering water be careful not to allow the water to touch the base of the bowl (it will burn the chocolate; you will know if it is overheated the chocolate will become grainy)

Add the butter and mix well, it should be a glossy ganache (smooth shiny chocolate)

Pour onto the pastry base and allow to set in the fridge to set
