One Saturday a month, head chef at Faithlegg House Hotel Jenny Flynn will join Maria McCann on The Saturday Café for Food At Faithlegg. This month Jenny is sharing her butter chicken recipe. Jenny will share a seasonal recipe and talk about the upcoming trends in the food world, focusing on local suppliers. She will also give tips and tricks for entertaining at home.


Indian Butter Chicken (Murgh Makhana) Curry

This is a recipe that can be adapted to vegan quite easily great flavour and marinade can be used for summer BBQ.


Tandoori chicken marinade


20g garlic puree

5g salt

5g chilli powder 1 lime juice only

20g ginger puree


5g turmeric

1 lime juice only

300ml natural yogurt

Dice the chicken and marinade for 12 hours before use


Butter chicken sauce

1 lb of butter (butter is used for cooking the chicken in)

Do not put butter into the sauce as it will make it not suitable for a vegan

1 large onion diced

35g ginger puree 8 cloves of garlic chopped

30g garam masala

8 cardamom seeds crushed

10g cayenne pepper

10g ground cumin

10g ground coriander

1 cinnamon stick

2 bay leaves

1 litre good-quality vegetable stock

200g tomato puree

1litre tomato passata

1lt coconut milk



Make the sauce by frying off the onion without colour add the spices with the garlic and ginger

Allow to cook slowing

Add liquid and cook for a further 5 mins

Keep stirring and cook out for 30mins it should become thicker sauce consistently

Remove cinnamon stick add chopped fresh coriander

 To assemble the dish

Melt butter in a pan fry off chicken and add sauce allow to cook for 15 mins
