Monday - Baldwin's Dairy Farm in Knockanore

Thomas Baldwin runs a family dairy farm and Baldwin’s Farmhouse Ice Cream in Knockanore, West Waterford.

Along with his parents John and Maria, Thomas runs a 150-cow dairy herd along the Blackwater Valley, which the Baldwin family have been doing for six generations.

Passionate about sharing the quality of the family farm's milk, Thomas turned his hand to making ice cream in 2006 and added a specially built little kitchen on the farm where he and his small team make deliciously rich traditional ice cream.

Baldwin’s Farmhouse Ice Cream was then born in 2007.

Tuesday - Power's Sustainable Beef Farm in Clonea-Power

John and Alan Power run a Sustainable Suckler Beef family farm in Clonea-Power.

Under the shade of the Comeragh Mountains, the farm extends to approximately 140 hectares, which is managed in two blocks and supports a suckler herd of 200 cows producing finished beef animals.

The farm has been in the Power family for five generations, with John, his son Alan and his wife Catherine now running the business.

John is Flagship Farmer for McDonald’s through a contract with Dawn Meats and the farm is a member of the Bord Bia Beef Quality Assurance Scheme, which is an integrated scheme for beef producers and processors to provide the customer with quality-assured beef. The scheme details elements such as legal compliance, animal welfare and environmental stewardship, which are independently audited and certified.

Wednesday - Costin’s Sustainable Dairy Farm in Ring

Jamie Costin runs a sustainable dairy family farm, overlooking Dungarvan Bay in Ring, Co.Waterford.

However, he is also well known for taking part in two Olympics as a Walker, in 2002 and 2008. He then returned home in 2012 and now runs a very successful sustainable dairy farm.

The Costins are no strangers to farming, Jamie's sister Mairéad runs an organic vegetable enterprise in Ring called Garraí Mara which provides vegetables to shops and restaurants around Waterford and further afield.

In this episode, you'll also hear from Jamie Costin's vet Chris Humphreys.

Thursday - Dunphy’s Vegetable Farm in Annestown

Based in Annestown along the Copper Coast, the Dunphy family are vegetable growers and suppliers of prepared vegetables to the catering sector in the region.

Since 1999, Eoghan, along with his parents Pat and Sibéal and his team have supplied stores, pubs and restaurants around Waterford city, county and beyond.

From growing and farming the vegetables, the processing end, and the distribution of the produce, the Dunphys, along with over 30 staff, do it all.

Friday - Maighréad Barron runs a Dairy Farm in Clonea-Power

Tooraneena woman Maighréad Barron leases and runs a very successful dairy farm in Clonea Power.

Maighréad grew up on a farm, studied at Ard Scoil na nDéise in Dungarvan and then on to UCD to study Ag Science, which is where her passion really grew, following a work placement stint in New Zealand.

Awarded FBD Farmer Of The Year - Land Mobility 2018 and 2020, Maighréad took over the farm on a long-term lease in 2018 and is currently milking 96 cows on the 100ac farm in Co. Waterford.
