Duck & Soba Noodle Bowl

Serves 2

Ingredients

  • Soba Noodles
  • Greens  - wilted spinach
  • 2 Spring onion
  • 2cm ginger
  • 1 red long sweet chilli
  • 1 carrot ribbon
  • 1/2 red onion
  • Handful green beans/mange tout
  • 4 tbsp soy sauce
  • 2 tbsp fish sauce
  • Juice 1/2 lime
  • 1 tbsp peanut rayu
  • Fresh coriander

Garnish with sesame seeds & crispy onions

 

Why Duck?

It's succulent, flavorful, and tender meat with crispy skin.

 

Parts of the duck we eat:

  • Duck breast
  • Duck leg
  • Duck liver
  • Duck heart

 

How to cook a perfect duck breast pink:

About 55oC

 

Rule of 3 x 5

  1. 5 minutes, skin side down, + 30 seconds, flesh side down
  2. 5 minutes in the oven
  3. 5 minutes resting wrapped tightly in foil
